Making meatloaf in a muffin tin allows it to cook faster, and the resulting mini-loaves are great to serve fresh or make ahead and freeze.<\/p>\n\n\n\n<ul class=\"wp-block-list list-style-ingredients\">\n<li>2 pounds ground beef, 90% lean<\/li>\n\n\n\n<li>2 large eggs<\/li>\n\n\n\n<li>5 cloves of garlic, minced<\/li>\n\n\n\n<li>\u00bc cup ketchup<\/li>\n\n\n\n<li>\u00bc cup fresh parsley, chopped<\/li>\n\n\n\n<li>2 cups onion, diced<\/li>\n\n\n\n<li>\u00bd cup milk<\/li>\n\n\n\n<li>3\/4 cup panko breadcrumbs<\/li>\n\n\n\n<li>2 tsp.
