  • 3-4 lbs corned beef brisket with seasoning packet
  • 6 garlic cloves
  • 2 onions chopped

Method

  1. In a 6 quart slow cooker, place the chopped onion in an even layer. Place the corned beef with the seasoning packet on top of the onions, then pour in the chicken stock until it almost covers the corned beef. Then, add in the garlic and bay leaves. Cook on low for 8-10 hours. When 3 hours have passed, add the carrots and potatoes. 2 hours prior to serving, add in the cabbage wedges. Once the corned beef is cooked until tender, remove from the crock pot and allow to rest for 15-20 minutes before slicing. Be sure to slice the corned beef against the grain. Serve with the potatoes, carrots, cabbage, and jus.

  • 4 lb pork shoulder
  • 3 tsp salt
  • 1 tsp pepper
  • 1 large onion chopped
  • 2 jalapenos chopped
  • 8 garlic cloves minced
  • 1 cup orange juice

  • 1 tbsp cumin
  • 2 tbsp olive oil

  1. Pat the pork shoulder dry, then coat with the salt and pepper. Combine the ingredients for the rub and rub all over the pork shoulder. Place the pork shoulder in the slow cooker, fat cap facing up. Top with the onion, jalapeño, and garlic, then pour over the orange juice. Slow cook the pork for 10 hours on low heat, or 7 hours on high heat.
  2. Once cooked, remove the pork from the slow cooker and shred with two forks. Place the remaining juices in a small bowl or measuring cup and set aside. After the pork has been shredded, crisp up the meat in batches by frying in a large nonstick pan or skillet with a little bit of oil on high heat. Pour some of the juices over the meat and allow them to evaporate and for the meat to develop a golden crust before removing from the pan. After the pork has been crisped, pour some of the juices over the meat. Serve hot.

  • 3 lbs boneless beef chuck roast cut into 1 1/2 inch pieces
  • 2 tsp salt
  • 1 tsp pepper
  • 3 tbsp olive oil
  • 4 large carrots peeled and cut into 1 inch chunks
  • 2 medium yellow onions cut into 1 inch chunks
  • 2 tbsp balsamic vinegar
  • 1 1/2 tbsp tomato paste
  • 4 tbsp crushed garlic cloves
  • 1 1/2 tsp sugar
  • 1/2 tsp dried thyme
  • 2 cups beef broth
  • 2 cups water
  • 2 cups red wine cabernet sauvignon
  • 1/4 cup all-purpose flour
  • 1 lb baby yukon potatoes cut in half
  • 2 tbsp fresh parsley chopped for garnish

  1. Remove the beef from the refrigerator, pat dry with paper towels, and season with your teaspoons salt and pepper. In a large pan, heat 1 tablespoon of the olive oil over medium-high heat until the oil is nice and hot. Sear the meat in batches, turning carefully with tongs, adding about one more tablespoon of olive oil for each section. Once the meat has been evenly seared with a brown crust, place the meat and any browned bits on a separate dish to the side.
  2. In a crock pot (or dutch oven), add the onions, garlic, balsamic vinegar, tomato paste, red wine, beef broth, water, dried thyme, sugar, carrots, and baby yukon potatoes and stir. Add the beef stew meat to the crock pot mixture and spread in the flour evenly. Cook (simmer) on low heat in the crock pot for 8 hours or on high for 4 hours. Stir occasionally scraping the bottom of the pot with a wooden spoon to incorporate all flavors. Garnish with fresh parsley and serve immediately.

  1. Start by heating oil in a large skillet pan on medium-high heat. While oil is heating, season the chuck roast with a liberal amount of salt and pepper. Sear the roast on all sides until well browned (about 5 minutes per side). Once seared, place the roast into your slow cooker (dutch oven).
  2. Add in the onions, garlic, potatoes, carrots, celery, balsamic, mustard, brown sugar, Cabernet, thyme, and bouillon. Season with salt and pepper. Add in the stock and stir.
