  • 1 lbs New York strip steak
  • 1 tbsp vegetable oil or any oil with a high smoke point
  • 2 tsp salt
  • 1 1/2 tsp black pepper
  • 3 tbsp unsalted butter
  • 6 cloves garlic peeled and quartered
  • 2 sprigs fresh rosemary
  • 2-3 sprigs fresh thyme
  • 1 sprig fresh sage

Method

  1. Pat each steak dry with paper towels and liberally season each side of the steak with salt and pepper, or to taste.
  2. In a cast iron skillet, heat ½ to 1tbsp of vegetable oil on medium high heat, ensuring it coats the entire pan. Once the oil is hot, transfer your steaks to the skillet .Sear the steaks on each side for about 3-4 minutes each, or until a brown crust has formed. Use tongs to render the white fat along the sides of the steak and sear the edges, for about 1-2 minutes per side. Reduce the heat from medium-high to medium and add in the butter, garlic, and herbs. Continuously spoon the butter sauce over the steaks. Continue to baste the steaks until they are about 10 degrees away from your desired temperature (they will continue to cook while they rest). For medium steak, the correct temperature is 145°F. So you can remove the steak when it reaches about 135°F and let it rest.
  3. Once the steaks have reached their desired temperature, transfer them to a cutting board and loosely cover with aluminum foil. Allow the steak to rest 10 minutes before slicing. Slice the steak into ½ to 1 inch thick strips to serve. Serve with extra butter sauce.

  • Carne Asada Marinade – To make the carne asada marinade recipe, you’ll combine extra virgin olive oil, fresh chopped cilantro, sugar, lime juice, minced garlic cloves, soy sauce, chili flakes, diced jalapenos, onion powder, cumin, apple cider vinegar, and ground black pepper together to make it. You will not need a carne asada seasoning with you use this marinade.

Ingredients

  • 1 lb lean ground beef 80-90% lean
  • 1/4 cup panko breadcrumbs
  • 2 large eggs beaten
  • 3 tsp ketchup
  • 2 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • 1 1/4 tsp kosher salt
  • 2 tbsp garlic minced
  • 1 tbsp extra virgin olive oil
Gravy
  • 3 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef stock
  • 1 1/2 tbsp ketchup
  • 1 tsp onion powder
  • 2 tsp Worcestershire sauce
  • 6 oz baby bella mushrooms
  • black pepper

Method

  1. In a large mixing bowl, combine all of the ingredients except for the oil until thoroughly mixed. Shape the mixture into 4 equal patties, about ¾-1 inch thick.
  2. Heat the olive oil on medium-high heat in a large nonstick skillet. Once heated, add in the steaks and brown about 3-4 minute per side and then transfer to a separate plate.
  3. Next, make the gravy. Reduce the heat to medium and add the butter. Once the butter has melted, add the flour and whisk until smooth. Pour in the beef stock while on medium-low and continue to whisk. Add the ketchup, onion powder, and Worcestershire sauce and whisk until combined. Add the mushrooms and simmer for 5 minutes until the sauce thickens. Season with additional salt and pepper. Add the steaks back into the skillet with the gravy. Cook for another 10 minutes or until the steaks are completely cooked through.

  • Cooking oil – I use vegetable oil though you can use any oil that has a high smoke point

Method

  1. Pat each steak dry with paper towels and liberally season each side of the steak with salt and pepper, or to taste.
  2. In a cast iron skillet, heat ½ to 1tbsp of vegetable oil on medium high heat, ensuring it coats the entire pan. Once the oil is hot, transfer your steaks to the skillet .Sear the steaks on each side for about 3-4 minutes each, or until a brown crust has formed. Use tongs to render the white fat along the sides of the steak and sear the edges, for about 1-2 minutes per side. Reduce the heat from medium-high to medium and add in the butter, garlic, and herbs. Continuously spoon the butter sauce over the steaks. Continue to baste the steaks until they are about 10 degrees away from your desired temperature (they will continue to cook while they rest).
  3. Once the steaks have reached their desired temperature, transfer them to a cutting board and loosely cover with aluminum foil. Allow the steak to rest 10 minutes before slicing. Slice the steak into ½ to 1 inch thick strips to serve. Serve with extra butter sauce.

  • 1 lbs New York strip steak
  • 1 tbsp vegetable oil or any oil with a high smoke point
  • 2 tsp salt
  • 1 1/2 tsp black pepper
  • 3 tbsp unsalted butter
  • 6 cloves garlic peeled and quartered
  • 2 sprigs fresh rosemary
  • 2-3 sprigs fresh thyme
  • 1 sprig fresh sage

Method

  1. Pat each steak dry with paper towels and liberally season each side of the steak with salt and pepper, or to taste.
  2. In a cast iron skillet, heat ½ to 1tbsp of vegetable oil on medium high heat, ensuring it coats the entire pan. Once the oil is hot, transfer your steaks to the skillet .Sear the steaks on each side for about 3-4 minutes each, or until a brown crust has formed. Use tongs to render the white fat along the sides of the steak and sear the edges, for about 1-2 minutes per side. Reduce the heat from medium-high to medium and add in the butter, garlic, and herbs. Continuously spoon the butter sauce over the steaks. Continue to baste the steaks until they are about 10 degrees away from your desired temperature (they will continue to cook while they rest). For medium steak, the correct temperature is 150°F. So you can remove the steak when it reaches about 140°F and let it rest.
  3. Once the steaks have reached their desired temperature, transfer them to a cutting board and loosely cover with aluminum foil. Allow the steak to rest 10 minutes before slicing. Slice the steak into ½ to 1 inch thick strips to serve. Serve with extra butter sauce.

Ingredients

  • 1 1/4 lb flank steak thinly sliced
  • 3 tbsp vegetable oil
  • 7 cups broccoli florets
  • 3 tsp sesame seeds
  • 1 tbsp garlic ginger paste
  • 1/2 cup hot water optional if steaming broccoli or thinning sauce
  • 7 tbsp soy sauce
  • 4 tbsp brown sugar
  • 2 tbsp corn starch
  • 1/2 tsp black pepper

  1. First, prepare the stir fry sauce ingredients. In a small bowl, combine thoroughly then set aside.

Ingredients

  • 1 lb beef tenderloin filet
  • salt
  • pepper
  • 1 tbsp extra virgin olive oil
  • 1 lb baby bell mushrooms
  • 5 slices prosciutto
  • 2 tbsp yellow mustard Coleman's brand
  • 1 tbsp all-purpose flour for surface
  • 7 oz puff pastry defrosted in refrigerator
  • 3 egg yolks beaten

Method

  1. Generously season the beef filet with salt and pepper on all sides. Heat a tablespoon of olive oil in a large pan on high heat Sear the filet on all sides until well browned. Allow the fillet to cool. Once cooled, brush all sides with Coleman’s yellow mustard and set aside.
  2. Then, make the mushroom duxelles. Puree the mushrooms in a food processor. Then cook the mixture in a sauté pan, allowing all moisture to be released. Once all of the moisture has boiled off, set the pan aside to cool.
  3. Next, roll out a large piece of plastic wrap. Lay out the slices of prosciutto and spread the mushroom duxelles on top. Place the beef fillet in the middle, rolling the mushroom and prosciutto over the fillet. Use the plastic wrap to roll into a tight barrel shape and refrigerate for 20 minutes.
  4. Meanwhile, preheat the oven to 400F. While the oven is preheating, lightly flour your surface and roll out a sheet of puff pastry to a size that will wrap around the fillet. Unwrap the filet from the plastic and place in the middle of the puff pastry. Brush the edges of the pastry with the beaten egg yolks. Fold the pastry around the fillet, cutting off any excess pastry. Brush with beaten egg yolks and chill for 10 minutes. Place the fillet on a baking pan, brush again with beaten eggs. Score the top of the pastry without going all the way through and sprinkle with coarse sea salt. Bake at 400F for 25-35 minutes or until medium rare. Allow to rest for 10 minute before slicing and serving.

  • 1 lb lo mein egg noodles cooked

Ingredients

  • 3-4 lbs beef brisket
  • 2 tbsp olive oil
Beef Brisket Rub
  • 2 tbsp brown sugar
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 tsp cumin powder
  • 1/2 tsp mustard powder
  • 1 tsp salt
  • 1/2 tsp black pepper
BBQ Sauce Recipe
  • 1 tbsp garlic minced
  • 1/2 cup apple cider vinegar
  • 2 cups ketchup
  • 1/2 cup brown sugar
  • 2 tsp black pepper
  • 2 1/2 tsp onion powder
  • 2 tsp mustard powder
  • 2 tsp cayenne pepper adjust to preferred spice level
  • 1 tbsp Worcestershire sauce

Method

  1. Combine the rub ingredients and then rub all over the brisket. Set aside for 30 minutes.
  2. Then, combine the ingredients for the BBQ sauce into the slow cooker. Place the brisket into the slow cooker and cook for 8-10 hours on low.
  3. Once cooked, place brisket on a tray and pour the liquid into a saucepan. Bring the liquid to a simmer on medium high to high heat and reduce until thickened. While the liquid simmers, drizzle the brisket with olive oil and roast in the oven at 375F for about 15 minutes. Remove from the oven and baste with the sauce, then return to the oven again and roast for 5-10 minutes. Serve thinly sliced across the grain with the leftover BBQ sauce.
