Beat the mixture with an electric mixer on moderate speed until stiff peaks form. Add in the vanilla when you see the peaks begin to form. You can spread the topping over the sweet potato pie or use a piping bag to dot the pie in decorative dollops. Use a kitchen torch or slightly broil to lightly toast and brown the topping.

  • 1 Frozen pie dish (deep dish)
  • 1 Pie crust for topping
  • 1 1/4 lbs honey crisp apples cored, sliced, peeled
  • 1 1/4 lbs granny smith apples cored, sliced, peeled
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 lemon
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1 egg beaten
  • 1 tbsp sugar
  • 1 tbsp butter
  • 1 tub vanilla ice cream

Method

  1. Preheat oven to 375F. Take frozen pie crusts from the freezer and allow to thaw in the fridge.
  2. In a large bowl, combine the sliced apples, sugar, flour, salt, cinnamon, nutmeg, lemon juice, lemon zest, and vanilla extract. Mix until all apple slices are coated in the mixture.
  3. Once pie crust is thawed, use a fork to poke holes in the bottom of the crust. Fill the crust with the apple filling. Place pie crust on top and press the fork down along the edge of the bottom crust to seal. Brush the pie with the egg wash and sprinkle with the tablespoon of sugar. Cut four slits into the top of the pie to create a vent.
  4. Bake the pie for 50-60 minutes until the crust is golden brown. Allow to cool before slicing, top with vanilla ice cream and serve.

  • 2 1/2 cups all-purpose flour
  • 1 cup butter unsalted, cut into 1/2 inch cubes
  • 1 tsp salt
  • 1 tsp sugar
  • 8 tbsp ice water

Method

  1. Place flour, sugar, and salt into the bowl of a food processor. Pulse for about 5 seconds to mix well. Add butter, 1/3 at a time, to the flour mixture and pulse several times after each addition. Continue to pulse until the remaining pieces of butter are about the size of peas. Ingredients

  • 29 oz can of unsweetened pumpkin puree
  • 1/4 tsp cloves ground
  • 1 tsp cinnamon
  • 1/8 tsp allspice
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 large egg yolk

Method

  1. Preheat the oven to 350F. Place the frozen pie crust in the fridge to thaw.
  2. In a large bowl, combine the pumpkin puree, cloves, cinnamon, allspice, ginger, nutmeg, salt, granulated sugar, brown sugar, vanilla extract, eggs, and egg yolk. Mix until thoroughly combined.
  3. Place pie crust into pie plate and poke holes on the bottom with a fork. Pour the pumpkin mixture into the pie shell and spread evenly.
  4. Bake at 350F for 35-40 minutes, or until the edges are set but the center jiggles slightly when shaken.
  5. Allow to cool at room temp for 2 hours before serving. Slice and serve with whipped cream or vanilla ice cream.
