  • 2 tsp black pepper
  • 1 1/2 tsp celery seed
  • 3 tsp fresh sage minced

  1. Take your pork roast out of fridge and allow it reach room temperature. This should take about 30 minutes to an hour. While the roast reaches room temperature, begin preheating your oven to 325F.
  2. Mix the spices together in a small bowl and rub liberally all over the roast. Place the roast in a large roasting pan, fat side up. Pour the chicken broth on the bottom of the pan until it comes up about an inch. Roast your pork shoulder at about 35 minutes per pound or until it reaches an internal temperature of 180F (use a meat thermometer to confirm internal temp). Make sure to periodically check on your roast in case the broth has evaporated and you need to add more. Once the roast has reached the proper internal temperature, remove from the oven and transfer to a serving platter or wire rack to rest for 40 minutes.

Ingredients

  • 1/4 cup brown sugar
  • 1 tbsp chili powder
  • 1 tbsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp kosher salt
  • 1 tsp pepper
  • 1 pork shoulder roast
  • 4 onions
  • 1 bottle barbecue sauce
  • 8 hamburger buns

Method

  1. Start by mixing together the brown sugar, chili powder, paprika, garlic powder, salt, and black pepper in a small bowl. Once the dry ingredients are well combined, rub the mixture all over the shoulder to evenly coat it, wrap the pork shoulder in plastic wrap and place in the refrigerator over night.
  2. The next day, chop the onions in quarters and place in the bottom of the crock pot. Then place the pork shoulder in the crock pot on top of the onions, cover and cook for about 8 hours or until the pork is soft, tender and falling apart. Carefully the pork and onions from the crock pot and place them on a baking sheet. Slice the onions and using two forks shred the pork by pulling it apart in opposite directions.
  3. Pour the barbecue sauce bottle into the crock pot, then place the shredded pork and onions back in the crock pot and stir to evenly coat in the barbecue sauce and juices. Serve on toasted hamburger buns or Hawaiian sweet rolls and enjoy!

Method

  1. Preheat the oven to 350F. While the oven is heating up, line a baking sheet with aluminum foil.
  2. In a small bowl combine the rosemary, sage, thyme, parsley, Italian seasoning, and garlic and set aside. Then, generously season meat with salt and pepper before searing. In a large pan or cast iron skillet, heat oil on medium-high heat until hot then add the tenderloin to the pan rotating to cook evenly on all sides until dark golden brown. Once properly seared, lay the tenderloin out on to the baking sheet.
