Method

  1. Preheat the oven to 350F. Prepare 2 9-inch cake pans with a nonstick cooking spray and place a layer of parchment paper on the bottoms of the pan.
  2. Whisk together the cake flour, cocoa powder, baking soda, and salt in a large mixing bowl. Sift the dry ingredients to remove any lumps.
  3. In a separate large mixing bowl, cream the butter and sugar on medium for about 5minutes with an electric mixer. Gradually add in the eggs until fully combined,then add the oil, food coloring, vanilla extract, and vinegar. Scrape down the bowl as needed.
  4. Mix in the dry ingredients and buttermilk 1/3 at a time. Alternate between 1/3 of dry ingredients, then 1/3 of the buttermilk, etc. Mix until just combined.
  5. Distribute the batter evenly between the two prepared pans and tap against the counter to remove any air bubbles. Bake at 350F for 25-30 minutes or until a toothpick comes out clean. Remove the cakes from the oven and allow to cool in the pans for about 20 minutes before removing them and cooling them on a wire rack.
  6. While the cakes cool, prepare the cream cheese frosting. In a large mixing bowl, use an electric mixer to beat the cream cheese until smooth then add in the butter and beat until well combined. Add in the powdered sugar and vanilla extract until thoroughly combined, scraping down the sides as required.
  7. Once the cakes have completely cooled, it is time to assemble. Level the tops of each cake with a knife. Place the first layer on a cake stand and frost evenly. Place the second layer on top and use the remaining frosting to frost the entire cake in an even layer. It’s also optional to place some cream cheese in a piping bag and add piping around the edges of the cake. Slice and serve.

Ingredients

  • 8 oz walnuts roughly chopped
  • 8 oz hazelnuts roughly chopped
  • 8 oz pistachios roughly chopped
  • 1/4 cup sugar
  • 1 1/2 tbsp cinnamon
  • 1 tsp cloves
  • 2 sticks salted butter melted
  • 1 16oz pack of phyllo dough thawed
Syrup
  • 1 cup water
  • 3/4 cup sugar
  • 1 cup honey
  • 1 tsp orange extract
  • 6 cloves
  • lemon juice from one whole lemon

Method

  1. First, preheat your oven to 350F.
  2. While the oven preheats, prepare the honey syrup. In a large saucepan, combine the water and sugar on medium-heat, stirring until the sugar dissolves. Once the sugar has dissolved, add the honey, orange extract, cloves and stir. Bring this mixture to a boil. Once the mixture is boiling, reduce the heat and simmer for about 20-25 minutes. Allow the syrup to cool before adding in the lemon juice and removing the cloves.
  3. Next, make the nut mixture. In a food processor, add the chopped walnuts, pistachios, and hazelnuts. Pulse a few times until they become slightly minced and then transfer to a large mixing bowl. Add sugar, cinnamon, cardamom and cloves to the bowl with your nut mixture and thoroughly combine.
  4. Assemble the baklava. Make sure to prepare a 9x13x2 baking pan with a nonstick spray or brushing with melted butter. Place a sheet of phyllo dough in the baking dish. You can either fold the sheet in half or trim to size with kitchen shears. Brush the sheet with melted butter. Repeat this process until you have used about 1/3 of the pastry sheets. Make sure each sheet has been individually brushed with the melted butter.
  5. Once you have completed your phyllo layers, distribute an even layer of the nut mixture on top. Use another 1/3 of the phyllo dough, brushing each sheet with melted butter. Spread the remaining ½ of the nut mixture on top. Finish the baklava with the final 1/3 of phyllo pastry using the same method of brushing each individual sheet with melted butter.
  6. Before baking, make sure to the cut the baklava into individual pieces. Take a sharp knife and cut the pastry into either 24 or 36 diamond-shaped pieces. Once the pastry is cut, bake at 350F for 35-45 minutes, depending on the strength of your oven. Remove the pastry when the baklava reaches a golden color and a skewer comes out clean. Immediately pour the cooled syrup over the baklava when it is removed from the oven. Allow the baklava to cool completely before serving. Garnish with additional chopped pistachios.

  1. Create a double boiler by place a saucepan of simmering water over medium to medium-low heat and placing a heatproof bowl on top of the saucepan. Add the egg yolks, sugar, lemon zest, juice, and salt into your heatproof bowl and whisk until thoroughly blended. Make sure to constantly whisk to prevent the yolks from curdling. Whisk until the mixture thickens to about the viscosity of a hollandaise sauce, about 10-12 minutes. Once the mixture has reached the desired thickness, remove from the heat.

  • 2 large eggs

  • 4 1/2 cups powdered sugar
  • 3 1/2 tbsp meringue powder
  • 10-12 tbsp water room temperature
  • 1 tsp vanilla extract
  • gel food coloring optional

  1. Place all of the icing ingredients into a large bowl. Then, using a hand mixer, beat the ingredients on high speed for 2-2 1/2 minutes. To test the consistency of the icing, lift the whisk up above the bowl. The icing should drizzle down within 8-10 seconds and then smooth out with the remaining icing in the bowl. Use optional gel food coloring to get desired color and use to decorate sugar cookies.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 sticks salted butter softened
  • 1 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 1/2 tsp vanilla extract
  • 1 tbsp dark molasses
  • 3 cups whole rolled oats
  • 1/2 cup raisins optional

Method

  1. In a medium mixing bowl, whisk together the flour, oats, cinnamon, baking soda and salt. Set aside.
  2. In another large mixing bowl, cream the butter with an electric hand mixer on medium speed until smooth. Once smooth, add the brown sugar and white sugar and beat until creamed. Once the sugar and butter mixture is creamed, add in the eggs, molasses, and vanilla and beat until thoroughly combined.
  3. Combine the dry ingredients with the wet ingredients and use the hand mixer on low to combine. At this point you can split the dough into batches and keep one batch plain and add raisins to the other. Cover the cookie dough and allow to refrigerate for at least 50 minutes.
  4. Meanwhile, preheat the oven to 350F degrees and prepare baking sheets.
  5. Once the dough has finished chilling, scoop about 2 ½ to 3 ½ tablespoons of dough on the sheets, depending on how large a cookie you prefer. Bake the cookies between 10-15 minutes until they are only slightly browned on the sides. Once baked, remove from the oven and allow to cool. Serve slightly warmed or at room temperature.

Method

  1. Preheat the oven to 325F. While the oven is heating, combine the cream, vanilla bean, and salt in a medium saucepan on low heat until it just becomes hot. Allow the mixture to sit for 2-4 minutes, then remove the vanilla bean.

Ingredients

  • 2 1/2 cups unsalted butter softened
  • 3 3/4 cups granulated sugar
  • 6 large eggs
  • 6 large egg yolks
  • 1 tsp salt
  • 1 1/4 tbsp vanilla extract
  • 3 1/2 cup all purpose flour

Method

  1. First, prepare your baking pan. Grease a 12 cup bundt pan generously with shortening and flour. To make things easier, you can also easily use Baker’s Joy nonstick cooking spray for baking. Set aside and preheat your oven to 350F.
  2. In a large bowl, add your butter and beat until creamy with an electric mixer. Once the butter has reached a creamy and smooth consistency, be sure to scrape down the sides of the bowl, the add in the sugar. Beat the sugar and butter together until thoroughly combined, about 1-2 minutes and set aside.
  3. In a separate mixing bowl, add together the eggs, egg yolks, vanilla extract, and salt. Use a fork or whisk to beat the eggs and yolks together and ensure that the salt and vanilla are evenly mixed in. With an electric mixer on low, slowly begin to add your egg mixture into your sugar and butter mixture. Allow the egg mixture to be fully incorporated into the batter before continuing to add more of the egg mixture. Once the egg mixture has been thoroughly combined, scrape down the sides of the bowl and beat the batter on medium high for about 2-3minutes. Reduce the electric mixer back to low, then slowly add in the flour, continuing to scrape down the sides of the bowl until all of the flour has been incorporated. Stir the entire mixture on medium-speed and beat for an additional minute. Pour the batter into your greased 12 cup bundt cake pan.
  4. Bake the cake for about an hour and 10-20 minutes. Use a wooden skewer and insert into the thickest part of the cake to determine doneness. Once baked, all the cake to cool for at least 20-25 minutes. Once the cake has cooled, insert a knife around the sides of the pan. Place the cake on a cooling rack and continue to allow to cool. Once cooled completely, slice and serve with fresh berries and whipped cream.
