Ingredients

  • 1 1/2 cup all-purpose flour
  • 3/4 cup salted butter
  • 1/2 cup celery coarsely chopped
  • 1/2 large white onion coarsely chopped
  • 1/2 large green bell pepper coarsely chopped
  • 5 garlic cloves minced
  • 1/2 lb andouille sausage sliced
  • 6 cups water
  • 3 cubes beef bouillon
  • 1 tsp sugar
  • 1/4 tsp cajun seasoning
  • 1 tbsp hot sauce
  • 4 bay leaves
  • 1/4 tsp dried thyme
  • 1 14.5oz can diced tomatoes
  • 1 8oz can tomato sauce
  • 2 tsp cornstarch
  • 1 10oz package of frozen cut okra
  • 1 tbsp white vinegar
  • 1/2 lb lump crab meat
  • 1 lb uncooked medium shrimp peeled and deveined
  • 1 tbsp Worcestershire sauce

Method

  1. Start by making a roux by melting the butter over medium heat then once melted adding in the flour and whisking together until turns a rich mahogany brown color, about 20-30 minutes. Once the roux forms a smooth, mahogany brown mixture, remove from the heat and continue to whisk until it stops cooking.
  2. Place celery, onion, green bell pepper, and garlic into the work bowl of a food processor and pulse until finely chopped. Add the vegetables and sausage into the roux and bring the mixture to a simmer over medium-low heat. Cook until the vegetables are tender. Remove from heat, set aside.
  3. Bring the water and beef bouillon cubes to a boil in a large soup pot. Whisk until the cubes dissolve, then whisk the roux mixture into the boiling water. Reduce the heat to a simmer. Add in the sugar, salt, hot pepper sauce, Cajun seasoning, bay leaves, thyme, diced tomatoes, and tomatoes sauce. Simmer the soup over low heat for 1 hour.
  4. While the soup simmers, melt the remaining butter in a skillet and cook the okra with vinegar over medium heat for 15 minutes. Stir in the okra into the simmering gumbo.
  5. Then add in the crab meat, shrimp, and Worcestershire sauce and simmer until the flavors have blended, another 45 minutes. Stir in the cornstarch just before serving.
  6. Serve hot over white rice. Season with salt and black pepper to taste.

Ingredients

  • 3 tbsp olive oil (with optional red chili pepper flakes)
  • 5 garlic cloves crushed
  • 1 1/2 cups red onion chopped
  • 1 lb ground beef
  • 2 tbsp cumin
  • 1 1/2 tbsp red chili powder adjust for spice preference
  • 1 tsp pepper
  • 2 tsp salt
  • 2 tbsp sugar
  • 29oz can of diced tomatoes
  • 1 cup chicken broth
  • 15oz can of black beans drained
  • 32oz can of kidney beans drained
  • 3 serrano peppers chopped
  • 1 1/2 cups sweet peppers
  • 29oz can of tomato sauce
  • 1 small tub sour cream for topping
  • 1 small bag shredded cheese for topping
  • 1 bunch cilantro (chopped) for topping

Method

  1. In a large pot, over medium heat the olive oil and minced garlic for about 2 minutes. Once heated, add onions and stir until they caramelize and become semi-translucent which takes about 5 minutes.
  2. Add the ground beef into the mixture and mix well until cooked through.
  3. Add in the serrano peppers, black beans, kidney beans, cumin, red chili powder, and garlic powder. Once mixed, add in the diced tomatoes, tomato sauce, and chicken broth. Bring to a boil, then reduce heat to low heat to medium low cover and simmer for 25-35 minutes.
  4. Serve by topping with scoop of sour cream, shredded cheese, and chopped cilantro.

The absolute best way to reheat your lasagna from the fridge is by putting it in a bake-safe dish, adding about 2 tablespoons of water, and covering it with aluminum foil. This keeps it from drying out. Put it at 350F for 15 to 25 minutes until heated through.

You can also put it in your toaster oven if you’re just heating a piece for yourself. The microwave is my least favorite way but it works. Just a few minutes and it’s ready though do yourself a favor and cover it with a paper towel to keep it from making a mess.

Ingredients

  • 1 lb ground beef (cooked and drained)
  • 4 cups marinara sauce
  • 5 cups ricotta cheese (whole milk)
  • 2 1/2 cups parmesan cheese (grated)
  • 3 tbsp fresh parsley (chopped)
  • 3 tbsp fresh basil (chopped)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil (extra virgin)
  • 3 1/2 cups mozzarella cheese (shredded)
  • 15 lasagna sheets (noodles)

Method

  1. Preheat oven to 350F.
  2. In a large saucepan, cook 1 lb of ground beef over medium high heat until cooked through and is no longer pink. Drain well.
  3. Mix the prepared beef with 4 cups of marinara sauce to make your meat sauce. Set aside.
  4. In a large mixing bowl, mix together the ricotta cheese, parmesan, fresh parsley, basil, salt, black pepper, and olive oil and set aside.
  5. In your lasagna baking dish, spread a thing layer of the marinara and meat mixture on the bottom. Place 3 lasagna noodles lengthwise in the dish to create a layer of pasta. Spread enough ricotta mixture to cover the noodles, then add a layer of the fresh mozzarella cheese. Repeat these layers until you’re out of mixture. (*This recipe uses no boil lasagna noodles. If you have noodles that require boiling, fill a large pot with hot water and boil them for the recommended time. Then rinse the noodles in cool water before layering)
  6. Cover with aluminum foil and bake for 25-30 minutes at 350F, then uncover and broil on low for 1-2 minutes.
