  1. In large pot over dutch oven, heat up olive oil over medium-high heat. Add in the onion and ground beef, browning the beef until there is no longer any pink. Add the jalapeno and garlic and saute for an additional minute or until garlic is fragrant. Once the garlic is aromatic, add in the tomatoes with chiles, beef stock, tomato sauce, spices. Simmer for 30 minutes, occasionally stirring. After 30 minutes, toss in your corn and beans and cook until thoroughly heated through and add the cilantro and lime. Serve warm with preferred toppings.

  • 8 thick cut bacon slices chopped
  • 2 tbsp butter
  • 3 stalks celery finely chopped
  • 1 large white onion chopped
  • 4 cups russet potatoes diced into 1/4" cubes
  • 3 tbsp garlic minced
  • 1/3 cup all-purpose flour
  • 2 cups chicken stock
  • 3 cups clam juice
  • 1/2 tsp red pepper flakes
  • 2 tsp chicken bouillon
  • 1/2 tsp fresh sage
  • 1/2 tsp smoked paprika
  • 1/4 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 tbsp fresh parsley

  • 1 cup heavy whipping cream
  • 18-20 oz canned clams drained and chopped

Method

  1. Reserve the clam juice from the cans into a measuring cup. Combined with the bottled clam juice, you should have about 3 cups total. Set aside.
  2. In a dutch oven or soup pot, render the fat of the bacon on medium to medium-high heat. Remove half the bacon and drain on a paper towel-lined plate.
  3. Add the butter to the remaining bacon and fat to the pot. Increase the heat and add the celery and onion. Saute the veggies over medium-high until the onions are slightly translucent. Add the potatoes and red pepper flakes, then the sprinkle in the flour. Add the chicken stock, clam juice, chicken bouillon, bay leaves, and seasonings and bring to a boil.
  4. Once the mixture is boiling, reduce to a simmer and simmer uncovered until the potatoes are fork tender. Once the potatoes are fork tender, remove the bay leaves and stir in the heavy whipping cream. Remove the pot from heat and add the clams, seasoning the chowder with salt and pepper too taste. If you prefer the chowder to be thinner you can add more heavy cream or chicken stock. Serve hot topped with chopped bacon, oyster crackers, and fresh chopped parsley.

  • 1/2 cup butter unsalted
  • 1 cup carrot diced
  • 1 cup celery diced
  • 2 1/4 cups yellow onion chopped
  • 1 tsp kosher salt to taste
  • 1 tsp black pepper

  • 1 lb dried split peas rinsed and dried
  • 1 medium ham bone
  • 2 bay leaves
  • 2 tsp fresh thyme divided

Method

  • 3 tbsp extra virgin olive oil
  • 2 cups yellow onion chopped
  • 4-5 stalks celery chopped
  • 2 1/4 cups carrots peeled and chopped
  • 2 tbsp butter
  • 6 garlic cloves minced
  • 4 cups vegetable stock
  • 4 cups chicken broth For vegetarian soup, simple omit the chicken broth and substitute with more vegetable stock
  • 2 14.5 oz cans diced tomatoes undrained
  • 3-4 medium golden potatoes peeled and diced
  • 1/2 cup fresh parsley chopped
  • 3 bay leaves
  • 2 1/2 tsp fresh thyme minced
  • 2 1/2 tsp fresh sage minced
  • 2 1/2 tsp fresh rosemary minced
  • salt large pinch
  • 2 tsp black pepper
  • 2 cups frozen green beans
  • 1 cup frozen peas
  • 1 1/2 cups frozen corn
  • 1 1/2 cups ditalini pasta uncooked, optional
  • 1 cup kidney beans
  • 2 cups fresh spinach

Method

  1. In a large soup pot, on medium-high heat, heat the olive oil and butter through until melted. Once heated, add in the onions, carrots, and celery and saute for 4-5 minutes. Once softened, add in the garlic and saute for an additional 30 seconds. Add the broth, tomatoes, parsley, potatoes, bay leaves, salt and pepper. Bring the soup to a boil, then add in green beans and corn. Reduce the heat to medium, and simmer until potatoes are nearly fork-tender, about 25-30 minutes. Add in the ditalini pasta 8-10 minutes before the end of cook time, so that the pasta is cooked al dente. Add the peas and cook an additional 5 minutes. Finally, add in the fresh spinach just before serving, allowing the leaves to slightly wilt. Serve hot and enjoy!

Ingredients

  • 4 tbsp unsalted butter separated
  • 2-4 tbsp extra virgin olive oil
  • 1 large onion thinly sliced
  • 5 tbsp garlic minced
  • 5 1/4 cups canned whole tomatoes
  • 1 cup chicken stock
  • 3/4 cup heavy cream
  • 1/2 tbsp sugar
  • 1/2 tsp crushed red pepper
  • 1/2 tsp oregano
  • 1/2 tsp celery seed
  • salt to taste
  • black pepper to taste
  • 1 loaf rustic country white bread chopped into 1 inch-thick cubes

Method

  1. In a large saucepan on medium-high heat, melt 2 tbsps of butter if about 1 tbsp of olive oil. Toss in the garlic and onion, sauteing until softened and the onion is slightly translucent. Once the garlic and onion have softened, add in the tomatoes with their juice, water, heavy cream, sugar, red pepper, celery seed, and oregano. Season with desired amount of salt and pepper. Bring the mixture to a boil, crushing the tomatoes fully with the back of a spatula or spoon. Once the tomatoes have been broken up, reduce the heat to a light simmer. Simmer the soup for 10-12 minutes.
  2. While the soup simmers, make your croutons. In a skillet on medium-high heat, melt the remaining butter, allowing it to sightly brown without burning. Add in the olive oil and the diced bread. Toss the diced bread in the olive oil and butter until evenly coated. Once the bread has been evenly coated and toasted, remove from skillet and set aside.
  3. Once the soup has fully cooked, use an immersion blender to puree until smooth. Serve the soup with a swirl of extra virgin olive oil and top with your home-made croutons and basil if desired.

  • 1 large white onion peeled and halved
  • 4 1/2 inch fresh ginger cut in half
  • 1 tbsp vegetable oil for brushing
  • 1 tbsp whole coriander seeds
  • 6 star anise
  • 5 whole cloves
  • 3 cardamom pods
  • 3 cinnamon sticks
  • 8-10 cups beef stock
  • 8-10 oz raw steak thinly sliced
  • 1 1/2 tbsp brown sugar
  • 3 tsp fish sauce
  • salt to taste

  • 7 oz uncooked rice noodles
  • 1/2 cup bean sprouts
  • 2-4 limes cut in to wedges
  • 1/4 cup chilies thinly sliced
  • 1/4 cup white onions thinly sliced

  • Thai basil personal preference for garnish

Method

  1. First, char the onions and ginger. Place the onion and ginger on a baking sheet lined with foil and brush with vegetable oil. Broil on high for about 8-10 minutes, until the tops of the onion and ginger are lightly charred. Remove and set aside.
  2. Then, make the broth. In a large stockpot or dutch oven on medium-high heat, heat the anise, cloves, cinnamon, cardamom and coriander. Toss the spices around until they become fragrant, between 3-4 minutes.
  3. Once the spices become fragrant, add in the charred onion,ginger, and beef stock. Stir and cook on medium-high until the broth reaches a simmer. Once the broth has reached a simmer reduce the heat to medium low and cover. Simmer the mixture for 30-35 minutes. When the mixture has about 8-10 minutes of simmering left, add in the thinly shaved steak so it can begin to cook.
  4. After the mixture has simmered, strain out the onion, ginger and spices. Add in the brown sugar and fish sauce and add salt to taste.
  5. It’s a good idea to prep your rice noodles while the broth simmers. Cook the noodles according to package instructions and rinse with cold water. Drizzle them with oil to prevent sticking.
  6. Now it is time to assemble the pho. Add 1 individually-sized portion of noodles to each individual serving bowl. Ladle the hot broth into the serving bowls. Add the bunches of herbs to each bowl, and garnish with the hoisin and sriracha sauces and squeeze a wedge of lime juice over top. Serve immediately.

Method

  1. In a large soup pot, cook the bacon pieces until crispy and browned then set aside. Add the butter into the pot and cook the chopped onion in the butter and bacon fat on medium heat until tender. Once tender, add in the garlic and cook until it becomes fragrant. Once the garlic is fragrant, sprinkle the flour over everything and stir. Next, add the potatoes, chicken broth, milk, heavy cream, salt, and pepper, and bring to a boil.   • 8 garlic cloves minced

There is nothing quite as satisfying as hearty bowl of homemade chicken noodle soup on a cold day. It instantly warms the soul and makes you feel warm and cozy. Not to mention it makes great leftovers. This is my familys favorite recipe hands down!

Ingredients

  • 2 tbsp butter unsalted
  • 1 small white onion diced
  • 2 carrots peeled, sliced
  • 2 celery stalks sliced
  • 5 garlic cloves minced
  • 8 cups chicken broth (chicken stock)
  • 2 bay leaves
  • 1/2 tsp salt to taste
  • 1/2 tsp pepper to taste
  • 2 1/2 lbs chicken breast skinless, frozen
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh lemon juice squeezed

Method

  1. Over medium heat, melt butter in a large pot (or dutch oven). Add in the onions, carrots, celery and garlic and cook until tender.
  2. Whisk in the chicken stock, bay leaves and season to desired taste with salt and pepper. Add chicken, cover, and bring to boil, then reduce heat and simmer. Keep the pot covered until the chicken is cooked through. This will take about 35 minutes. Once chicken is cooked, remove chicken and allow to cool. Once cooled, remove any bones and cut into small 1 inch pieces.
  3. Add chicken and pasta into soup and cook for about 7 minutes until the pasta is tender or has reached your desired consistency.
  4. Remove soup from heat and add in chopped parsley, dill and tablespoon of lemon juice. Season with a touch more salt and pepper to your personal taste and serve.
