  • 1 lbs New York strip steak
  • 1 tbsp vegetable oil or any oil with a high smoke point
  • 2 tsp salt
  • 1 1/2 tsp black pepper
  • 3 tbsp unsalted butter
  • 6 cloves garlic peeled and quartered
  • 2 sprigs fresh rosemary
  • 2-3 sprigs fresh thyme
  • 1 sprig fresh sage

Method

  1. Pat each steak dry with paper towels and liberally season each side of the steak with salt and pepper, or to taste.
  2. In a cast iron skillet, heat ½ to 1tbsp of vegetable oil on medium high heat, ensuring it coats the entire pan. Once the oil is hot, transfer your steaks to the skillet .Sear the steaks on each side for about 3-4 minutes each, or until a brown crust has formed. Use tongs to render the white fat along the sides of the steak and sear the edges, for about 1-2 minutes per side. Reduce the heat from medium-high to medium and add in the butter, garlic, and herbs. Continuously spoon the butter sauce over the steaks. Continue to baste the steaks until they are about 10 degrees away from your desired temperature (they will continue to cook while they rest). For medium steak, the correct temperature is 145°F. So you can remove the steak when it reaches about 135°F and let it rest.
  3. Once the steaks have reached their desired temperature, transfer them to a cutting board and loosely cover with aluminum foil. Allow the steak to rest 10 minutes before slicing. Slice the steak into ½ to 1 inch thick strips to serve. Serve with extra butter sauce.

Ingredients

  • 2 tsp salt
  • 2 tsp black pepper
  • 1 1/2 tsp celery seed
  • 3 tsp fresh sage minced
  • 3 tsp fresh rosemary minced
  • 2 tbsp garlic cloves minced
  • 2 tbsp fresh Italian flat-leaf parsley roughly chopped
  • 6-8 lb pork shoulder
  • 1 cup chicken broth 3/4 cup – 1 cup depending on how much evaporates from pan

Method

  1. Take your pork roast out of fridge and allow it reach room temperature. This should take about 30 minutes to an hour. While the roast reaches room temperature, begin preheating your oven to 325F.
  2. Mix the spices together in a small bowl and rub liberally all over the roast. Place the roast in a large roasting pan, fat side up. Pour the chicken broth on the bottom of the pan until it comes up about an inch. Roast your pork shoulder at about 35 minutes per pound or until it reaches an internal temperature of 180F (use a meat thermometer to confirm internal temp). Make sure to periodically check on your roast in case the broth has evaporated and you need to add more. Once the roast has reached the proper internal temperature, remove from the oven and transfer to a serving platter or wire rack to rest for 40 minutes.

  1. If you find the that roast’s skin needs some extra crisping up, while the roast is resting, preheat the oven to 475 degrees. Put the roast back in for 13-17 minutes. Once thoroughly browned and crispy, remove from the oven and immediately carve and serve.

  • 2 tsp coriander
  • 1 tsp cumin
  • 1/4 tsp turmeric
  • 1/2 tsp crushed fennel seeds
  • 1/4 tsp cinnamon
  • 1 tsp black pepper

  • 1/4 tsp ground cloves
  • 1 tsp chili powder adjust for spice preference
  • 2 tbsp olive oil
  • 1 large yellow onion chopped
  • 1 1/2 tbsp fresh ginger peeled and minced
  • 3 tbsp garlic minced
  • 1 cup chicken broth low sodium
  • 1 cup canned diced tomatoes drained
  • salt to taste
  • 2 tbsp lemon juice
  • 2 lbs boneless skinless chicken breast cubed
  • 1/3 cup heavy whipping cream
  • cilantro for garnish

Method

  1. Combine all spices together in a small bowl and set aside.
  2. In a nonstick skillet, heat the vegetable oil on medium to medium-high heat. Once the oil has heated, saute the onion until softened and slightly golden. Once the onions have become slightly golden and caramelized, add in the minced garlic and ginger, then the spice mix. Add in the chicken stock and tomatoes. Bring to boil. Once boiling, reduce the heat and simmer for 5-7 minutes.
  3. If you have an immersion blender blend your mixture until evenly pureed and smooth. If you have a regular blender, add your mixture to the blender and blend until evenly pureed and smooth then return to pan on medium high heat. Add lemon juice and salt to taste.
  4. Add in the chicken and continue to simmer the curry in the skillet on medium-low to medium until the chicken is cooked through. Once the chicken has cooked through, add in the heavy whipping cream and stir. Serve hot over basmati rice.

  • 1 1/2 lbs New Orleans Camelia dried red beans dried
  • 4 tbsp olive oil divided
  • 1 lb Andouille sausage 1/2 inch thick slices

Cook the beans for about 2 hours or until softened. If you want a creamier texture, remove about 1 ½ cups of the beans before serving and mash with a fork. Otherwise, add in the parsley and scallions. Adjust the seasoning and consistent with water. Discard the bay leaves. Serve hot over white rice.

Ingredients

  • 1 lb lean ground beef 80-90% lean
  • 1/4 cup panko breadcrumbs
  • 2 large eggs beaten
  • 3 tsp ketchup
  • 2 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • 1 1/4 tsp kosher salt
  • 2 tbsp garlic minced
  • 1 tbsp extra virgin olive oil
Gravy
  • 3 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef stock
  • 1 1/2 tbsp ketchup
  • 1 tsp onion powder
  • 2 tsp Worcestershire sauce
  • 6 oz baby bella mushrooms
  • black pepper

Method

  1. In a large mixing bowl, combine all of the ingredients except for the oil until thoroughly mixed. Shape the mixture into 4 equal patties, about ¾-1 inch thick.
  2. Heat the olive oil on medium-high heat in a large nonstick skillet. Once heated, add in the steaks and brown about 3-4 minute per side and then transfer to a separate plate.
  3. Next, make the gravy. Reduce the heat to medium and add the butter. Once the butter has melted, add the flour and whisk until smooth. Pour in the beef stock while on medium-low and continue to whisk. Add the ketchup, onion powder, and Worcestershire sauce and whisk until combined. Add the mushrooms and simmer for 5 minutes until the sauce thickens. Season with additional salt and pepper. Add the steaks back into the skillet with the gravy. Cook for another 10 minutes or until the steaks are completely cooked through.

Use tongs to render the white fat along the sides of the steak and sear the edges, for about 1-2 minutes per side. Reduce the heat from medium-high to medium and add in the butter, garlic, and herbs. Continuously spoon the butter sauce over the steaks. Continue to baste the steaks until they are about 10 degrees away from your desired temperature (they will continue to cook while they rest).
  3. Once the steaks have reached their desired temperature, transfer them to a cutting board and loosely cover with aluminum foil. Allow the steak to rest 10 minutes before slicing. Slice the steak into ½ to 1 inch thick strips to serve. Serve with extra butter sauce.

Ingredients

  • 6 tbsp butter separated
  • 1 tbsp olive oil
  • 1 cup mushrooms sliced
  • 1 tbsp garlic minced
  • 1 cup uncooked orzo pasta
  • 15 oz can chicken broth
  • 3/4 cup parmesan cheese grated
  • 1 tbsp lemon zest
  • 1/3 cup fresh basil chopped
  • salt to taste
  • black pepper to taste
  • 3 tbsp fresh basil for garnish
  • fresh grated parmesan cheese for garnish

Method

  1. In a large skillet, melt the butter on medium-high heat. Toast the orzo until it is lightly browned. Once the orzo is toasted, add in the chicken stock and bring to the boil. Once the chicken stock is boiling, cover the skillet and reduce to a simmer until all liquid has been absorbed about 20-22 minutes.
